Memorial Day: honoring our veterans and celebrating what many might say is the official start of the summer season! School is winding down and everyone is scheduling their pool openings, cleaning their grills, and filling their propane tanks, gearing up for yet another BBQ season! A friend of mine says that if she can’t put it on the grill, it’s not getting cooked, and I love that! I just happen to be the grill master in my household as well, so I am always on the lookout for BBQ-related deals to keep it fun and yummy for the family and simple for me! I have had my eye on a Blackstone Grill for a while now…it is so versatile, and I love that I would be able to cook breakfast using the breakfast kit and make fun hibachi-style meals. The 10-year anniversary of owning our home is coming up on the 30th of May, so the house may or may not be getting one…SURPRISE hubby (because I know he’s reading this) it’s happening! There is just something about the American flag decor that I have always enjoyed seeing and now use in my own home and when I host. Not that we ever need an excuse to eat tacos, chips, and guac, buutttt there is a whole day on the calendar for it every week…of course I am talking about Taco Tuesday! However, there is one more day that trumps just a regular Taco Tuesday and it happens once every 365 days – and of course that day is Cinco de Mayo, or the fifth day of May. Cinco de Mayo celebrates the victory of Mexico over the French army in 1962, but these days it’s more commonly dedicated to the culture and deliciousness that is Mexican food…and I am salivating writing this, y’all! To make this day even better, this year it lands on a Friday, or as I say “Fri-Yay,” and now that’s what I’m talking about! See our Cinco de Mayo celebration ideas below.

If you are planning a fiesta like I am with some friends and your kiddos, you’ll want to stock up on some themed supplies and get out your themed decor! I have personally already made sure that I’ve located my shirt for such an occasion! If you have ever heard the phrase, “I’ve got my turkey pants on” (for Thanksgiving), well this is my taco shirt that I’ve had since my daughter’s “Taco Two’sday” birthday a couple years ago! Yes, I love tacos so much I dedicated a whole birthday party to them!

Bust out the margarita machine and glasses, cut the limes, grab the salt, sugar and tajin for your glass rimmer set, and gear up for some delish margaritas, whether you enjoy them with tequila or virgin! There are so many variations from frozen to without ice and garnished with lemon, lime, jalapeno or mint. You can cater to your palate with spicy, smoky, fruity or just a good ol’ old fashioned marg…the options are endless!

Let’s talk recipes! Esquites, aka Mexican street corn, has really taken off the last few years and I cannot get enough! This year I will be making a creamy and refreshing street corn salad using this recipe for our upcoming fiesta, as it’s so easy to create and really gets the taste buds excited! Check out the quick video on how to make it here!

Ingredients:

  • 4 cups corn (fresh or frozen)
  • 1 cup queso fresco or cotija cheese
  • 1/4 cup pickled jalapeno
  • Juice of 1 lime
  • 1 avocado
  • 1/2 cup pickled red onion
  • 1 cup Roma tomatoes
  • 1/4 cup cilantro
  • 1 cup mayo
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Chips for dipping!

Directions:

  • Pan fry corn (dry) until charred and let cool
  • Mix mayo with all of the seasonings and set aside
  • Chop tomatoes, cilantro, jalapeno, red onion and crumble the cheese
  • Add corn, tomatoes, cilantro, onions and jalapenos to dressing and mix
  • Fold in avocado and cheese and garnish
  • Serve with your favorite tortilla chips or eat with a spoon!

Not that we ever need an excuse to eat tacos, chips, and guac, buutttt there is a whole day on the calendar for it every week…of course I am talking about Taco Tuesday! However, there is one more day that trumps just a regular Taco Tuesday and it happens once every 365 days – and of course that day is Cinco de Mayo, or the fifth day of May. Cinco de Mayo celebrates the victory of Mexico over the French army in 1962, but these days it’s more commonly dedicated to the culture and deliciousness that is Mexican food…and I am salivating writing this, y’all! To make this day even better, this year it lands on a Friday, or as I say “Fri-Yay,” and now that’s what I’m talking about! See our Cinco de Mayo celebration ideas below.

If you are planning a fiesta like I am with some friends and your kiddos, you’ll want to stock up on some themed supplies and get out your themed decor! I have personally already made sure that I’ve located my shirt for such an occasion! If you have ever heard the phrase, “I’ve got my turkey pants on” (for Thanksgiving), well this is my taco shirt that I’ve had since my daughter’s “Taco Two’sday” birthday a couple years ago! Yes, I love tacos so much I dedicated a whole birthday party to them!

Bust out the margarita machine and glasses, cut the limes, grab the salt, sugar and tajin for your glass rimmer set, and gear up for some delish margaritas, whether you enjoy them with tequila or virgin! There are so many variations from frozen to without ice and garnished with lemon, lime, jalapeno or mint. You can cater to your palate with spicy, smoky, fruity or just a good ol’ old fashioned marg…the options are endless!

Let’s talk recipes! Esquites, aka Mexican street corn, has really taken off the last few years and I cannot get enough! This year I will be making a creamy and refreshing street corn salad using this recipe for our upcoming fiesta, as it’s so easy to create and really gets the taste buds excited! Check out the quick video on how to make it here!

Ingredients:

  • 4 cups corn (fresh or frozen)
  • 1 cup queso fresco or cotija cheese
  • 1/4 cup pickled jalapeno
  • Juice of 1 lime
  • 1 avocado
  • 1/2 cup pickled red onion
  • 1 cup Roma tomatoes
  • 1/4 cup cilantro
  • 1 cup mayo
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Chips for dipping!

Directions:

  • Pan fry corn (dry) until charred and let cool
  • Mix mayo with all of the seasonings and set aside
  • Chop tomatoes, cilantro, jalapeno, red onion and crumble the cheese
  • Add corn, tomatoes, cilantro, onions and jalapenos to dressing and mix
  • Fold in avocado and cheese and garnish
  • Serve with your favorite tortilla chips or eat with a spoon!

Easter Bark

A pretty pastel Easter treat that’s sweet, crunchy, and easy to make!

INGREDIENTS:

  • Colored chocolate pieces (colors can be interchanged for each holiday!! This is a great party snack for anytime of the year) I went with pink, white, orange and I used a light green food coloring gel with white chocolate for Easter
  •  Sprinkles for topping (optional)

DIRECTIONS:

  • Melt chocolate pieces in 40 second increments – if chocolate becomes clumpy add 2 tsp of vegetable shortening! 
  • Pour into baking dish and top with sprinkles
  • Place in refrigerator and let cool for about 2 hours (or until hardened)
  • Cut into small pieces and enjoy! 

Easter Dirt

This Easter Dirt is a super cute treat for the kiddos! Prep it in an Easter-themed bucket to really make it feel like a tasty garden of goodness.

INGREDIENTS:

  • 1 pack Oreo
  • 3.5 cups milk
  • 2 small boxes instant serve vanilla pudding
  • 1 oz cream cheese
  • 1/2 stick butter
  • 1 cup powdered sugar
  • 8-ounce tub of cool whip
  • Decorations for top

DIRECTIONS:

  • Break the Oreos into crumbs (can use food processor or ziplock back and rolling pin)
  • Whip the milk and two pudding boxes together until pudding forms- set aside in fridge
  • Cream together cream cheese and butter – once smooth, add powdered sugar
  • Once smooth, add in the pudding mixture
  • Once combined fold in the cool whip
  • In a truffle dish (or Easter bucket), layer Oreo crumbs then pudding mixture until you end on Oreo crumbs
  • Decorate with Peeps, Cadbury eggs, Lindt chocolate carrots, edible grass, or gummy worms and dig in!!

Peeps S’mores

Our favorite campfire snack just got an Easter makeover! These Peeps S’mores are not only delicious, they’re convenient for the classroom too!

INGREDIENTS:

  • Graham crackers
  • Peeps
  • Hershey’s chocolate

DIRECTIONS:

  • Break apart graham crackers and chocolate bars into s’mores-sized pieces
  • Top graham cracker with chocolate, Peep, and another graham cracker
  • For the classroom, prep individual s’mores ingredients in Ziploc bags!

Rice Krispies Eggs

Who doesn’t love a Rice Krispies treat?! These Rice Krispies Eggs are gooey and chewy and melt-in-your-mouth amazing.

INGREDIENTS:

  • Rice Krispies
  • Mini marshmallows
  • Almond bark
  • Easter sprinkles

DIRECTIONS:

  • Follow Rice Krispies treat instructions on back of cereal box
  • Mix in Easter sprinkles
  • Spray Easter egg-shaped molds with nonstick spray and fill with mixture
  • Let set and remove from molds
  • Melt almond bark and dip one end of egg then cover with sprinkles (optional)
  • Enjoy!!

  • 3 share-size Snickers

  • Fold in Cool Whip 
  • Dice up apples
  • Stir into pudding mixture 
  • Chop up Snickers and fold half into mixture (if you’re taking this dish to-go, transfer mix to new bowl)
  • Top with rest of Snickers and optional caramel sauce and enjoy!
